What are some good chess books ?

I have Soviet Middlegame Technique, which is excellent at helping you form plans as a player and Fundamental Chess Endings by Muller and Lambrecht, because endgame technique is a fundamental. Both I can recommend.
"Mayhem in the Morra" - Marc Esserman ⭐⭐⭐⭐⭐
The Right Way to Play Chess by David Pritchard published in 1950 : An introduction to chess that provides detailed and illustrated explanations of the basic rules and general theories of chess would be the book i would personally suggest to an absolute beginner.
For the novice, Play Winning Chess by Seirawan (and also Winning Chess Tactics). For the more advanced player, Training for the Tournament Player, probably the only Dvortesky book I would recommend. And I suppose you could give My System a try.
